Vegetarian Crockpot Mexican Chili

vegetarian-chili-crockpotOne of the problems some folks have with eating vegetarian is their belief that it’s too hard. While it’s true that healthy eating can take additional planning, it doesn’t have to be difficult.

This week’s Meatless Monday recipe proves that eating vegetarian can be simple and satisfying. Just throw the ingredients in the crockpot before you leave the house and come home to a hearty meal that’s good for you and the planet!

This recipe is perfect for an easy no fuss dinner. If you’d like to go meatless all day try out: Zesty Carribean Banana Muffin for breakfast,  and  Greek Salad for lunch.

Recipe: Crockpot Mexican Chili


  1. 1 15-oz can garbanzo beans
  2. 1 15-oz can black beans
  3. 1 24-oz jar of your favorite salsa
  4. 2 tbsp chili powder (or more to taste)
  5. 1 tbsp cumin 1 cup water
  6. 1 15-oz can Mexican-style corn (optional)


  1. Mix all ingredients together in crockpot.
  2. Turn crockpot on low heat.
  3. Cover and cook 4-6 hours (depending on thickness you desire).
  4. Dish and enjoy!
